Ed’s Red comes from the breeding work of farmer/breeder Beth Rasgorshek of Nampa, Idaho. These shallots grow in a single season from seed, not from bulbs as other shallots are commonly grown. They get relatively large, have beautiful crimson skins and store all winter long and into the spring.
